Willow’s Crispy Fries

Fries And Burger At Willow NYC

The key to keeping hand-cut fries crispy lies in a dedication to the process. The chefs at Willow put the same level of care and attention into this side as they do any item on their expansive menu, resulting in a delicious, unforgettably crispy dish.

Each fry is evenly cut, ensuring that the center is fluffy while the outside maintains that perfect crunch. The fries are cooked quickly, then removed before any excess grease has a chance to soak into the hand-cut potatoes.

Always one for variety, Willow serves up their hand-cut fries in three different flavor options: garlic and parsley, cajun seasoned, or simply salted with flaky sea salt. Regardless of your choice, you are guaranteed the same level of flavor, with fries served up hot and seasoned to perfection.

Tips for the Perfect Hand-Cut Fries

The recipe for french fries may be incredibly basic– simply chop up potatoes and drop in oil– but there are definitely a few tricks out there to help any amateur chef achieve the perfect crunch! Read on to learn more about how our chefs are able to serve up fries that keep the entire city of New York begging for more.

  1. Cut Potatoes Evenly

Knife skills may not come quickly, but if you’re hoping to serve up delicious, unforgettable french fries, they are a vital part of the process.

When fries are not evenly cut, the result is a mix of different textures and flavors that make it difficult to truly enjoy the dish at the same level. Because different thickness levels require far different cooking times, you may fall into the trap of serving greasy, limp fries alongside overly burnt slivers of thinly sliced potato.

As you practice the knife skills necessary to obtain that perfectly measured slice, don’t feel the need to miss out! Consider investing in a tool specifically designed to achieve that perfect cut, every time.

  1. Soak the Fries in Advance

Like almost every naturally sourced food, potatoes have their own unique nutritional profile. Alongside their benefits, however, they also hold a good deal of starch. This common carbohydrate can bog down the grease, resulting in a less crispy, more limp fry.

To remove a bit of this excess starch, take the time to soak your hand-cut potatoes in salted ice water. Though longer soaks result in crispier fries, thirty minutes should be more than enough to strike the perfect balance, removing some starch while still saving your valuable time.

Remember, after soaking your potatoes, be sure to allow them a chance to fully dry before dropping them in the oil. This is highly important! Introducing wet veggies to oil is a recipe for disaster….and potential danger.

  1. Find a Signature Seasoning

Take a page from the Willow school of cooking, and experiment until you find your favorite seasoning. Once you do, stick to this classic! Make it a part of your usual routine, and you will quickly find all your dinner guests begging for this unique blend of flavors.

Or think outside of the box. Do you find yourself craving Indian food throughout the week? Add a bit of curry powder for your fries! Do you prefer a classic? Consider making your own handmade ketchup.
